Easy Hedgehog Rolls Recipe for children and fun-loving adults

I know its hard to believe but I don’t really like cake! I know, I know but I don’t have much of a sweet tooth I’m more a savoury person and especially bread. It is my kryptonite I can resist most temptations but never bread.

So when No.4 came home from school with this terms topic sheet I was pretty excited to see it was centred around bread!!

The children have learning about the ingredients, the different baking techniques and nutritional benefits but No.4 said his favourite part was tasting the different breads .. he really is a slice off the old loaf!

So inspired was he that he wanted to bake some bread at home, well I could hardly say no to that could I?

Having quite a short attention span, unless he is playing Xbox, I wanted something that was easy, relatively quick, fun and tasty and decided on these super cute hedgehog buns.

Description

These adorable hedgehog rolls are as delightful to look at as they are to eat! Soft, slightly spiced dough is studded with sweet raisins, creating a charmingly prickly appearance. Perfect for a cozy treat, these adorable glazed rolls offer a comforting warmth and a touch of sweetness in every cute, hedgehog-shaped bite.

Ingredients

For the buns

275 g Strong white flour – bread flour (plus extra for kneading)
1/2 tsp Mixed spice
1 pinch Salt
7 g Fast action dried yeast
50 g Caster sugar
1 medium Free range egg (at room temp)
125 mls Semi skimmed milk (at room temp)
16 Raisins

For the glaze

25 g Caster sugar
3 tbsp Milk

Instructions

In a large bowl put your flour, spice & a pinch of salt then add your cubed butter

Rub in the butter through the flour mix with your fingers until it looks like fine breadcrumbs

Stir in the yeast and the sugar

Add the egg to the milk (its important that they are not cold as it will affect the results) and whisk lightly

Make a well in your flour mix and pour in the egg & milk, gently stir in the flour until mixed well.

It will look like a sticky dough at this point

dust a large chopping board or work surface with flour and tip your dough on to it, sprinkle a little flour on top too and start kneading your dough. You need to do this for 10 mins to make your bread rise well.

After 10 mins roll your dough into a long sausage and cut into 8 equal pieces

Roll the dough balls in your hands the gently pull the ‘snout’ of your hedgehogs out with your fingers, create the spines by snipping the dough with scissors.

Cut the raisins in half and push them into the dough to make eyes and a nose.

Place your hedgehogs on a greased tray and cover loosely with greased plastic wrap and a tea towel

You need to prove your dough by leaving it somewhere warm, I use my utility room when the tumble dryer is on! Your dough is ready when its about twice the size and could take roughly 1 hour depending on how warm your room is.

Preheat your oven to 220/Fan 200/Gas 7 and bake your buns for 12 mins until golden brown

To make the glaze heat 25g of sugar with 3 tbsp of milk and simmer for 2 mins – this is very hot and for grown ups only!

Brush over your hedgehogs as soon as they come out of the oven and leave to cool on a wire rack
